Given that stat drain isn’t that common in 5e I’d hope the effects are described as part of the ability, for instance for the shadow:
The target dies if this reduces its Strength to 0
I thought they were all instant death, though I can’t remember if I read it somewhere or just assumed it. Makes sense though:
I think that’s still the case in 5e, there are just way less monsters with ability-draining attacks (shadows are the one most players have encountered, they can still be pretty deadly!)

Remember to save these for when the party are getting a little too “morally grey”, because unless you’re running a “dark and gritty” campaign then it will discourage them from ever wanting to get in a fight!
Chess clock / egg timer. If they don’t decide fast enough then no action for them! You don’t even need to actually do this (it would be a bit extreme in most situations), but the threat that it might happen should give them the necessary kick. Too much time deliberating? This monster just remembered it can take a legendary action on your turn!
